  • Place a clean jar on a kitchen scale and tare to zero. Add 20 grams starter, 100 grams flour, and 100 grams water.
  • Stir vigorously until no dry flour remains and the mixture is smooth.
  • Cover loosely with a lid.
  • Leave at room temperature for approximately 24 hours, or until doubled and bubbly.
  • Discard a portion before the next feeding and repeat the process.
