active sourdough starter

unbleached all-purpose flour

Instructions
Place a clean jar on a kitchen scale and tare to zero. Add 20 grams starter, 100 grams flour, and 100 grams water.
Stir vigorously until no dry flour remains and the mixture is smooth.
Cover loosely with a lid.
Leave at room temperature for approximately 24 hours, or until doubled and bubbly.
Discard a portion before the next feeding and repeat the process.
