  • Cook slowly, stirring occasionally, until deeply caramelized and golden brown, about 20–25 minutes.
  • Add chopped pears and cook until softened, about 5–8 minutes.
  • Stir in sugar, vinegar, salt, and spices.
  • Reduce heat to low and simmer, stirring occasionally, until thick and jam-like, about 15–25 minutes.
  • Taste and adjust seasoning if needed.
  • Cool slightly, then transfer to jars. Store in the refrigerator or freeze for later use.
