As if you haven’t been inundated enough with Fourth of July recipes, I’m here with another one for you. But! It’s for pancakes, which I like to think doesn’t count. Because while you may have all of your beers and brats and salads and popsicles lined up for the holiday, you might not have thought about breakfast. And what is a holiday if you don’t start celebrating it first thing in the morning, amiright??
Ahem. Sorry, I got really excited about breakfast for a second.
But seriously, let’s talk about fireworks pancakes for a bit. They’re mini pancakes dyed red, white and blue and then decorated with icing and sprinkles so they look like fireworks. I don’t know about you, but I love pancakes, and I love icing, and I LOVE sprinkles, so I’m definitely going to celebrate the holiday every morning this week with a big batch of these babies. One does not simply eat these pancakes for one breakfast this week.
I know that a bulk of this site is all about making things from scratch, so allow me to explain why I oftentimes love to use Bisquick for my pancakes. I have a bit of nostalgia for the product because it reminds me of my dad making his famous Bisquick-based pancakes and/or biscuits on weekend mornings growing up, but also, I love to use it when I want a pancake recipe to go.just.right. You know what I mean? Maybe I’m the only food blogger out there who has had trouble making pancakes, but it’s the truth. Sometimes they’re too thick, sometimes they’re too runny, sometimes they’re tough as cardboard and other times they taste like it. But with Bisquick, I am guaranteed a successful pancake. And you’d better believe if I’m going all out and making fireworks pancakes and eating them every day this week, I want the recipe to go smoothly.
This recipe is as smooth as can be. Just whip up the pancake batter, divide it among three dispenser bottles, stir in some food coloring and squeeze mini pancakes onto a hot griddle. When they’re done, stack them on a plate and decorate! It’s fun times both for kids and big kids (a.k.a., yours truly).
Because as I said, one does not simply celebrate Fourth of July without fireworks pancakes for breakfast. Or something like that.

Festive Fireworks Pancakes
A Girl Versus Dough original
Yields: 6 servings
2 cups original Bisquick® mix
1 cup milk
Red and blue food coloring
Betty Crocker® Rich & Creamy vanilla frosting
Red, blue and gold decorating sugar
In a large bowl, stir together Bisquick, milk and egg until well combined. Divide batter evenly among three squeeze dispenser bottles.
Squeeze a few drops of blue food coloring into one bottle, and red food coloring in another. Use a skewer or the back of a long spoon to stir food coloring into batter. Replace cap to seal.
Squeeze small circles of each batter onto a hot greased griddle; cook until lightly golden, about 3 minutes.
Arrange pancakes on a plate; pipe on frosting to look like fireworks. Sprinkle with decorating sugar. Serve with fresh berries, if desired.
