This is the week, you guys. This is the week for which all of the cookies have been baked, the jars have been filled, the gifts have been wrapped, the hot cocoas with giant marshmallows have been sipped, the stockings have been hung, the music has been played. It’s the final countdown to Christmas, the day of glad tidings, the day of His birth, the day of loved ones and mistletoe and making merry.

I’M SO READY.

This is my favorite holiday of them all for so many reasons. I can’t wait to see my family. I can’t wait to put glittery presents under their tinsel-covered Christmas tree. I can’t wait to drink Glühwein with my dad, make dessert with my mom, put coal in my brothers’ stockings (KIDDING, boys. Maybe.), join my husband as we watch our daughter’s eyes light up as she sees the magic of Christmas unfold in front of her. It’s all so whimsical, so magical, so delightfully holiday, I can’t even stand it. It all makes me so emotional, so nostalgic, so thankful, so joyful, so reflective that I can’t help sometimes but stand back and let it all unfold in front of me, too, like a child who has only experienced Christmas once before.

And when I come back into the fold, I’m ready to take it all in. Including this nutty blue cheese dip. YUMMEH.

I know we are not all fans of the blue cheese, but for those of us who are (raising my hand way up high!), you will lovelovelove this dip. It’s tangy and creamy, slightly crunchy from the addition of nuts and ever-so-slightly sweet with the addition of honey. You can spread it on fruit or crudités. You can top it with more chopped nuts and a drizzle of honey on a cracker. You can even roll or stuff it into chicken for an easy yet elegant dinner. And yes, you can put it in a jar and give it away as a gift, too, in case you’re one of those last-minute shoppers in desperate need of an idea. This one takes five minutes’ prep and would go great in a basket with water crackers and a bottle of red.

This goes without saying, but it also accompanies a cheese platter v. v. well (psst — thanks to Kerrygold for the beautiful cheese board you see above!), which is great for a Christmas or even New Year’s appetizer. We don’t really do the cheese plate thing for Christmas in our family (though we SHOULD, ahem), but my husband and I have started a small tradition of making a massive cheese plate for New Year’s Eve when we decide to stay in (which is, TBH, like almost every year because we are pretty far up on the Introverted Hermit scale). This spread is definitely being added to that menu this year.

And because even the thought of beautiful cheese plates makes me all sappy this time of year, now is when I will scoop this spread on a few crackers and take a moment to reflect on how thankful I am for you, dear reader. Nutty Blue Cheese Spread

Ingredients

Scale
  • 1 block (8 oz) Neufchatel cream cheese, softened
  • 8 ounces blue cheese
  • 1/2 cup chopped raw walnuts and/or almonds, plus more for topping (optional)
  • 1/4 cup sour cream
  • 1 tablespoon honey
  • 1 pinch cayenne pepper
  • 1 pinch salt

Instructions

  1. In large bowl, beat all ingredients until well mixed and mostly smooth. Transfer to serving bowl(s) or resealable jar(s); top with more chopped nuts, if desired. Serve with crackers.
  2. NOTE: Can be stored sealed in fridge up to 5 days.
