First off, choose brown spotted bananas. Overripe bananas contain more natural sweetness. This yields the classic banana bread flavor!

A little bit of vegan milk adds moisture. Feel free to use oat milk, almond milk, coconut milk, cashew milk, or macadamia nut milk.

Melted coconut oil is the baking fat. It adds moisture. Use refined coconut oil for a neutral flavor. Unrefined coconut oil has a slight coconut flavor.

Here are some ways to switch up the flavors of this vegan banana bread.

Add in some chopped up vegan chocolate bars. This creates pools of chocolate!

This banana bread is moist and slightly dense. The absence of eggs makes it less cake like and more dense. Overall, the bread is soft and fluffy, with a slight density.

How to Make

Step 1: Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).  Add a piece of parchment paper to a loaf pan.

Step 2: In a large mixing bowl, add the mashed bananas, vegan milk, melted coconut oil, and vanilla.  Stir to combine.

Step 3: Next, add in the light brown sugar, all-purpose flour, baking soda, and sea salt.  Stir until just combined.

Step 4: Add in the vegan chocolate chips.

Step 5: Transfer the batter to the bread pan.  Smooth into one even layer using a spatula.

Step 6: Dot with a few extra chocolate chips on top before baking.

Step 7: Bake for 40 to 45 minutes.

Step 8: Lastly, remove the vegan banana bread from the oven.  Fully cool before slicing and serving.

How to Serve & Store

Serve this vegan banana bread on its own or with toppings. Spread on peanut butter, vegan butter, almond butter, or another sauce. Or bake the peanut butter right in with my peanut butter banana bread!

Enjoy a slice with some hot coffee, hot chocolate, warm tea, or cold smoothie. This bread can be eaten morning, afternoon or night.

Store leftovers in an airtight container for up to 3 days.

Freeze for up to 1 month. Thaw before eating.
