It is so easy to make your own seasoning and that way you can customize to your tastes. My cabinet is full of homemade spice mixes!

When I was the pastry chef at Restaurant Marc Forgione in Manhattan, the amuse bouche was an everything bagel gougère. I piped and baked hundreds of these tiny choux pastries every night. This is the recipe for the everything bagel seasoning that I sprinkled on top. The insides were stuffed with a carrot cream cheese butter, in case you were wondering.

Why This is the Best Everything Bagel Seasoning

  • Just 5 ingredients in perfect proportions. The original recipe was equal parts by weight. I used 1 pound of each ingredient. I converted that to volume measurements as close as possible. This allows for the most balanced flavor without one ingredient overpowering the others.
  • No salt included. The recipe doesn’t call for sea salt because each use requires different amount of salt. For example, I do not add coarse salt to the tops of my everything bagels and I like to salt dips to taste. You could add 1 tablespoon of fleur de sel or flaked sea salt to the mix if desired.
  • A versatile spice mix for your cupboard. This seasoning mix isn’t just for bagels! I give you lots of ideas below, but I like to store it in an airtight jar or mini OXO pop container for easy sprinkling. These containers are also nice because they stack. I have it stacked with the homemade taco seasoning, pumpkin spice, apple pie spice and blackening seasoning.
  • Easily scale up or down in seconds. Since this professional recipe was developed using equal parts by weight, you could use a kitchen scale to make any batch size you want! This is also a good option if you only have a certain amount of one ingredient! Weigh it and use that weight for all the ingredients.

  • White Sesame Seeds: A mix of black and white sesame seeds vary the flavor and appearance of this spice mix. You could omit one or the other.
  • Black Sesame Seeds: You can substitute nigella seeds, which have the appearance of black sesame seeds and add a nice oniony flavor.
  • Poppyseeds: I always have too many poppyseeds in my spice cabinet from lemon poppy seed muffins and lemon poppyseed cake, but you could omit them if you wish.
  • Dried Garlic: Any variety of dried garlic will work in this recipe. Finding minced dried garlic allows you to simply whisk the ingredients together, but you can always pulse garlic flakes, chips or pieces in a food processor to make them smaller.
  • Dried Onion: The same is true for dried onion – just use whichever type of dried onion you can find. Crush onion flakes in a plastic baggie or pulse in a food processor to make them small. I wouldn’t recommend onion powder but you can use it in a pinch.

Step 1: Combine all ingredients in a small bowl and whisk to combine. 

If you can only find dried sliced garlic and onions, pulse several times in a food processor to break them into small pieces. You don’t want to pulverize or turn them into powder, so 10-15 pulses should be sufficient. Turn out into a bowl and combine with seeds.

Step 2: Store in a sealed jar, used spice container, or mini OXO pop containers.

Frequently Asked Questions

How long will everything bagel seasoning keep?

Spices do lose their flavor over time, but I wouldn’t be worried about that with this spice mix. Onions and garlic are intense and will last for over a year especially if tightly sealed.

Can I make a larger or smaller batch of this seasoning?

You can make as large a batch as you want! All the ingredients are equal by weight so it makes it very easy to scale up! At the restaurant we would make 4 quart batches! I also provide the volume measurements, so you can easily make a half batch.
