In case you haven’t noticed, it’s nearly summertime. Memorial Day weekend is NEXT weekend, people! And you know what that means — the potluck/party/cookout season is upon us. For a meat-free eater, this can be dangerous territory. The grill is topped with juicy burgers and hot dogs, the pasta salads are chock full of chicken, the dips have bits of bacon and beef… and it all looks so tempting and delicious. Le sigh. And with Memorial Day on a (Meatless) Monday, it’s extra difficult to avoid justoneteensybite of a meaty dish. I mean, who wants to eat just coleslaw and watermelon, am I right?

Luckily, there are plenty of tasty, meat-free dishes you can tag along to your next potluck or party that will please everyone, and won’t have you leaving with an empty stomach. Here are a few of my favorites:

greek 7-layer dip.
This Greek 7-layer dip — a Mediterranean take on Mexican 7-layer dip — is to. die. for. Kalamata olives, feta cheese, roasted red peppers? Yes please.

pretzel-crusted fried cheese.
Pretzel-crusted fried cheese. No explanation needed here. Just do it.

twice-baked tex-mex sweet potatoes.
Bring the fixin’s for these Tex-Mex Sweet Potatoes as a yummy main vegetarian dish (Note: You can bake them on the grill instead of in the oven).

black bean, avocado + corn salad.
This black bean and corn salad is called The Awesomest Side Salad for a reason.

buffalo wing beer bread.
Beer bread + creamy ranch dip = You, the life of the party.

Of course, as with most things in life — if all else fails, just eat dessert. It’s a win-win, really.

Hi Steph, The dip was awesome, the only problem I ran into was trying to spread the thicker hummus on the thinner consistancy of the yogurt mix. I think it would be easier if the hummus was spread on the bottom and the yogurt mix on top of that. But I must say that even if you just mixed the whole mess up together there is no way you could ruin it . It rocks

I have to agree the Greek 7 layer looks awesome. I especially like the idea of red peppers. I could see adding just a few pieces of Cayenne pepper to to spice it up a bit.

Armadillo – Thanks! Cayenne pepper would be a fantastic addition.
