nine-layer mexican tostadas
Because I love Mexican food.
Because — well, just because. Sometimes, an explanation isn’t necessary.
A Girl Versus Dough original
Yields: 4 servings
Ingredients:
canola or vegetable oil
4 fajita-size flour tortillas
1 can (16 oz) Old El Paso traditional refried beans
1 avocado, seeded and removed from the skin
1/4 cup pico de gallo or fresh chunky salsa
1/2 cup sour cream or Mexican crema
1/4 cup finely chopped cilantro
2 teaspoons hot sauce
1 teaspoon lime juice
chopped romaine lettuce
1 red bell pepper, sliced
canned corn, drained
sliced black olives, drained
crumbly cheese (like queso fresco or cotija)
sliced green onions
fresh lime wedges (optional)
Directions:
Heat about 1/4-inch worth of oil in the bottom of a large skillet over medium-high heat. When the oil shimmers, carefully place one tortilla at a time in the oil. Using tongs to push the tortilla into the oil, cook both sides until crispy and bubbly, about 30 seconds to 1 minute. Remove tortillas with tongs and place on a paper towel-lined plate to drain.
Meanwhile, in a small saucepan over low heat, heat refried beans until warmed through. In a small bowl, mash avocado with pico de gallo; set aside. In a separate small bowl, stir together sour cream, cilantro, hot sauce and lime juice until combined; set aside.
Top crisped tortillas with a thin layer of refried beans, then top with guacamole and lime-cilantro sour cream. Top with chopped romaine lettuce, sliced red pepper, corn, sliced olives, crumbly cheese and sliced green onions. Serve with a lime wedge, if desired.

I usually skim past the tostadas on the menu, too. I just love authentic corn tortillas too much to get anything other than tacos! Never thought about making them at home, where it might not be so awkward to eat ๐
